Hideriyama Shiro Suita Renge Japanese Natural Whetstone

This exceptional Japanese whetstone was selected by us and imported directly from Japan, thoroughly tested and sealed on sides and back to protect the stone for long term use.

Hideriyama was one of the most prized mines in the Tanba Region, a western Mine. Known for its softer, highly abrasive stones and especially it's Suita. This Koppa was mined from the Hon Shiro Suita layer. This piece has a pure white Shiro base with dense, pink Renge which shows vividly when wet. Perfect for small knives, razors and tools. Best suited as a pre finishing stone as it's larger abrasive particles remove the previous grit scratches effectively and quickly. These Suita will produce a deep, hazy Kasumi finish and edges which have aggressive tooth/bite. This example has some straight, thin lines which will need to be removed for even and consistent Kasumi finish. In terms of edge performance, this Shiro Suita is perfect for creating edges with an amazing balance of tooth vs Refinement. Chefs love Hideriyama Suita for their aggressive edges which perform amazing on tougher skinned vegetables like bell peppers. For razors, these Suita can be used for pre finishing as their fast cutting speed removes scratches from previous grits effectively.
