Hideriyama is a western, Tanba area mine which was known for producing softer, highly abrasive stones. Hideriyama Tomae are known for being easy to use and highly effective cutting stones. Hideriyama are most revered in the culinary and carpentry industries in JP. Chefs love them for their versatility in edge performance characteristics as well as their fast and efficient metal removal. Hideriyama Tomae can restore slightly deformed edges and remove scratches on the kiriba bevel from daily kitchen use. Quite soft so for razors, slurry management and proper hydration and technique are necessary. Works well as a pre finishing stone as it removes medium grit scratches quickly and effectively. Finish is deep, dark and cloudy with big contrast. Edges are aggressive and toothy and perfect for extended prep use and butchery.
