Hideriyama Hon Shiro Suita Ao Renge. Hideriyama is a western Tanba Area mine. Most famous it's Shiro Suita, Hideriyama produced amazing and unique Shiro Suita which are treasured for polishing and sharpening abilities. This extremely rare specimen contains beautiful blue or So Renge which is extremely rare. This large, wide piece is a brilliant looking stone which appears to be Ao, Blue for the entire height or life of the stone. This stone would make an amazing display piece as well! This soft and creamy Shiro Suita will remove medium grit scratches quickly and creates a deep and hazy Kasumi finish with huge contrast highlighted between the jigane and Hagane. Hideriyama Suita are used by knife polishers to establish a blanket of haze and contrast which can be left as a deep, hazy final finish or further refined with fine grained Awasedo to bring out fine details. In terms of edge performance, this Ao Renge creates an edge which straddles the line between toothy and aggressive and refined. This type of edge is loved by chefs as it promotes amazing food penetration, especially in tougher skinned vegetables like bell peppers.
