Newly mined Iyoto stone from Ehime. These Iyoto are considered Naka Toishi, or medium grit. They range in hardness and refinement capabilities with a wide range of potential performance characteristics depending on the type. There are 10+ different types of Iyoto which are currently being produced. This Mokume Woodgrain example is classic in appearance and really comes to life when wet with swirling, multi colored patterns. A large stone which sits in the middle of hardness and refinement capabilities. The grain feels quite aggressive with great cutting speed, perfect for bevel setting. When slurry is forced, the stone is extremely fast and aggressive, finishing at a solid medium grit refinement level. Water only laps are interesting with the aggressive feeling present but much more refined than the feedback would suggest. This is a high quality example of Woodgrain and capable of impressive levels of refinement if the slurry is worked. Also, its long length and width permit long honing strokes. Knives are left with an aggressive, tooth edge which is perfect for most kitchen uses. When used for razors, it is capable of removing bevel setting scratches with forced slurry and yet refined enough to progress nearly into pre finishing with water only.
