Product Details
Rare Yoshikazu Ikeda Shirogami #3 oil quenched, semi mirror finished 240 mm Gyuto. Extremely rare and desirable Honyaki acquired directly from Ikeda San.
This knife has been fully mirror polished on the Ha or hardened steel and Kasumi polished on the Ji or softer portion. This is a Honyaki or single piece of Shirogami #3 with no cladding material. It has been differentially heat treated. Polished and finished by Hideki Ino in Sakai.
Shirogami #3 is the most forgiving and tough of the White steel family and it's softer feel is a pleasure to sharpen. Ikeda San captures a wonderfully balanced rendition of this steel and finish is also impeccable.
The knife is fitted with a fixed, octagonal ebony handle with silver spacer and buffalo horn ferrule which matches the blade beautifully giving it a refined touch to round out the package.
This Gyuto is ground in a very balanced fashion with strong spine which tapers into a nice, thin tip. The grind geometry behind the edge is similar tapering down to a nice, thin grind where it counts.
This is a limited offering so please get them while we have them!
In terms of sharpening and polishing, this knife will perform excellent when used with natural stones.
Handmade Character
Each knife is individually handcrafted, with slight variations in dimensions, finish, markings, and natural handle materials. Minor cosmetic differences that do not affect function are part of its handmade character.
Use & Care
Hand wash and dry immediately; never soak or place in a dishwasher. Use a wooden or soft synthetic cutting board. Avoid bones and frozen foods unless the knife is specifically designed for that purpose, and never twist or pry with the blade.
Sharpening & Storage
Sharpen with suitable whetstones; avoid pull-through sharpeners and steel honing rods. Store clean and dry with the edge protected.
Carbon Steel
Carbon steel—including exposed edges on stainless-clad knives—naturally develops a patina and can rust if left damp. Wipe clean and dry frequently during use, and apply a light coating of food-safe oil for extended storage.
